I love slow cookers (or as I used to call them, crock pots)! I like the idea of making dinner in the morning before the day gets away from me. I also love the smell of a meal cooking in our house throughout the day. Slow cooker recipes are usually pretty easy too – just throw everything in the pot and let the magic begin!

Kale and Sweet Potatoes – Nutritional Powerhouses!
Kale is chocked full of vitamins, including Vitamin K! It is also high in fiber, iron, calcium, and antioxidants. I’ve read that it’s great for lowering cholesterol, detoxifying, being anti-inflammatory, and help protect against various cancers.
Sweet Potatoes contain beta-carotene which is an important antioxidant that helps to protect against cancer. They also contain many vitamins, iron, magnesium, and fiber.
Modifications to the Recipe Still Made it Tasty
Since I didn’t have a couple of the ingredients on hand, I omitted or replaced them. The recipe calls for bay leaves, which I didn’t have, so I didn’t add those. It also called for balsamic vinegar, which I didn’t have. In place of the balsamic vinegar, I used a gluten-free organic vinaigrette dressing. I’m sure that made the stew taste a little different from what the original recipe would have tasted like, but I still enjoyed it!
