Who would have thought that there were so many ways to make gluten free green bean casserole?!

Growing up, green bean casserole was a staple at our house once a year – Thanksgiving dinner. Sure my mom might have fixed it on other occasions, but it didn’t feel like Thanksgiving dinner was complete without it.
Typically, when people think of green bean casserole, they either like it or despise it (like my husband). Honestly, it was something I didn’t really care for as a kid but grew to really like as an adult.
I never realized there were so many versions of the casserole. When I think of it, I think of creaminess and a fried onion topping. However, there are many ways to make it without any of that.
Whether You Cook From Scratch or Use Store-Bought Ingredients, You Have Options
When I started eating gluten-free, I didn’t think I would be able to eat green bean casserole again. With the fried onions covered in a wheat batter and the cream of mushroom soup filled with gluten, I was bummed to think that I would miss this dish at Thanksgiving.
Fortunately, things have changed over the years and there are more gluten-free options. Additionally, the best and healthiest way is to make your casserole with real food ingredients instead of relying on processed ingredients.
However, if you want to use processed ingredients, let’s take a look at some of the common ingredients in a traditional green bean casserole.
What’s in a can of French’s Crispy Fried Onions?
- Onions
- Palm Oil
- Wheat Flour
- Salt
- Dextrose
Not too horrible, but bad enough for those of us who try to eat a healthy diet. Take the ingredient dextrose for instance. Dextrose is the sugar derived from corn. If processed food isn’t labeled as organic, the corn is likely GMO. Then you have the gluten that comes with the wheat flour. These are things I can’t eat.
Now let’s take a look at what’s in a can of Campbell’s Cream of Mushroom Soup:
Water, Mushrooms, Vegetable Oil (Corn, Canola, And/or Soybean), Modified Food Starch, Wheat Flour, Cream, Contains Less Than 2% Of: Salt, Whey, Soy Protein Concentrate, Monosodium Glutamate, Yeast Extract, Dried Garlic, Natural Flavoring.
Yikes! More gluten and GMO ingredients in addition to MSG, soy and natural flavoring (who knows what that consists of!). Definitely ingredients I don’t want to consume.
Healthier Ingredient Options
Here are some better options when it comes to gluten free fried onions and cream of mushroom soup.
Gluten Free Fried Onions
Raw Food Central Onion Rings. The ingredients are:
*Onions, *Cashews, *Sunflower Seeds, *Raisins, *Lemon (Or *raw Apple Cider Vinegar), Celtic Sea Salt* (*denotes Organic Ingredient)

Gluten Free Creamy Soup
Pacific Cream of Mushroom Soup. The ingredients are:
Water, Mushrooms*, Creme Fraiche (Cultured Cream*, Cultured Milk*)*, Rice Starch*, Rice Flour*, Cream*, Sea Salt, Garlic Powder*, Onion Powder*. (*Organic)
This soup is gluten-free, soy-free and organic. If you use it in a casserole in place of gluten soup, people won’t even notice the difference.
