It’s no secret that I don’t enjoy cooking, but it’s a necessity, right? Add to that my food allergies and both me and my husband being picky eaters – cooking can be a challenge!
Recently, my friend gave me some maple syrup to try, so I found a good recipe to use it in. I’m not used to baking with maple syrup, but after this experience I can say that I’ll be using it again in the future. I rarely bake because I have to limit the sweets, but my husband has a sweet tooth and pure maple syrup seemed to do the trick for both of us.
The Best Cinnamon Coffee Cake
From time to time, I try to bake something that both of us like, but I haven’t been too successful. You don’t know how many times I’ve tried to make chocolate chip cookies – those should be simple, right? So you can understand my excitement when I finally made something that he really liked! Actually saying it was the best cinnamon coffee cake he’s ever had! Wow, it’s even grain-free, gluten-free and doesn’t have refined sugar!
I used a recipe from Simply Living Healthy called “Grain-Free Cinnamon Coffee Cake with Maple Drizzle“.
I made a half batch of the recipe (for just the 2 of us) and omitted the pecans and raisins (per my picky husband).

Maple Drizzle Topping
I tried making both of the toppings she suggested. We liked both of them, but preferred the cream cheese version. It reminded me of the frosting on carrot cake. I forgot to take a picture of the coffee cake with the cream cheese frosting on top (we were too busy eating it:)), but you can see a picture with the topping on the Simply Living Healthy recipe page.
