Easy Spaghetti Squash and Greenfed Meatballs

I used to love pasta! Italian was my favorite type of food. However, with the changes I’ve made to my diet during the past couple of years, I don’t eat pasta near as much.

I had always heard that spaghetti squash made for a great pasta substitute. However, I had never tried spaghetti squash. This winter, when I saw organic spaghetti squash on sale, I decided it was time to try it. I found a great recipe and have enjoyed this meal a few times this winter!

Spaghetti Squash and Greenfed Meatballs

This spaghetti squash recipe comes from The Iron You. Definitely a healthier version than your traditional pasta spaghetti and meatballs. This recipe is very tasty and filling too! Eating one half the spaghetti squash with a couple of vegetable side dishes definitely filled me up.

The Benefits of Spaghetti Squash

Spaghetti squash is full of fiber, vitamins, minerals, and antioxidants. It provides Vitamins A, B, C, E, and K along with the minerals calcium, zinc, copper, manganese, and selenium. I’ve read that it also has sugars and a certain starch that provides a source of energy for our cells.

Spaghetti squash is also easy to prepare. I cut it in half, add a little oil, salt, and pepper to it and cook it in the oven. However, there are different ways to cook it as this article from Chew the World explains.

Modifications to the Recipe Still Made it Tasty

I’ve made this dish a couple of different ways. The first time, I made the tomato sauce from scratch as the recipe called for. It was very good, but I also wanted to try it using a store-bought sauce. It made for a little less work. I’m all about less work in the kitchen! I typically buy either organic tomato sauce in a glass jar from Whole Foods, or Trader Joe’s. Both the “made from scratch” sauce and the store-bought one tastes great! It just depends on your preference.

I also only use a half-pound of beef instead of both a quarter pound of beef and pork, which they recommend. I’m not a big pork eater.

    This looks fantastic! I actually haven’t bought spaghetti squash yet. I’ve been meaning to forever but just need to do it. How much did yours go on sale for?

      Thanks for stopping by! This was my first time trying spaghetti squash and I loved it! I’ve made this recipe a few times now. I think the organic squash I buy is usually $1.99/lb and what I buy is usually a little less than a pound.
